Livestock production uses large land areas and has negative effects on the environment - especially in terms of emissions of greenhouse gases. Reduced consumption of animal-based protein in favour of plant-based protein can contribute to a smaller carbon footprint and better health. Thus, a protein shift can vastly improve the sustainability of the agro-food system. The aim of this project is to study how animal proteins can be replaced by plant proteins in order to provide environmental and health benefits from a transdisciplinary perspective.
